Castronovo created this 85% dark chocolate using cacao from Tumaco, Colombia
On the Pacific coast of Colombia along the river delta lies the remote region of Tumaco, an area inhabited by escaped slaves forming Colombia's largest Afro-Colombian community. The river shores are lined with mangrove and dense tropical forest, having an equatorial climate with heavy rainfall year round. The region has a native cacao varietal located far upstream which is harvested in the wild.
Having deep chocolate flavors and mild bitterness, there is no other varietal better suited for an 85% cacao bar. This chocolate is recommended for the enthusiast seeking full flavor, high antioxidants, and low sugar content. You will find nice complex flavors in the chocolate of rum, molasses, cinnamon, and a barley malt in the finish.
