This light roast dark chocolate bar from Fresco Chocolate is crafted with cocoa beans from the ABOCFA cooperative based in Suhum, Ghana.
Ghana’s ABOCFA is one of four Organic/Fair Trade farmer cooperatives in Ghana - known for producing the highest quality traceable cacao in the region. The light roasted cacao in our Recipe 260 bar highlights the natural acidity of this cacao uncovering a sweetness reminiscent of fig jam. Next, the chocolate is heated, mixed and aerated, this is conching. Our subtle conche step slightly mellows the cacao’s natural acidity resulting in chocolate with balanced, complex flavors. A small amount of added cocoa butter enhances the chocolate’s silky texture as it melts on your palate.
